Caramelized Pears And Dolce Culatta With Orange – Flavored Vinaigrette

  • 2 peeled pears, without the core and divided into 4 segments
  • 2 spoons of pine nuts
  • 100 g of sugar
  • 60 ml of water
  • 8 slices of Dolce Culatta Conti
  • Mixed salad of your choice (rocket, lettuce and valerian)
  • For the orange-flavored vinaigrette:
  • 4 spoons of orange juice
  • A pinch of pepper
  • A spoon of Digione mustard
  • 2 spoons of aromatic vinegar
  • A spoon of honey


Prepare the orange-flavored vinaigrette: in a small glass jar with a lid, put the orange juice, the aromatic vinegar, the mustard, the honey and pepper. Close it and shake well and conserve it in the fridge.

In a non-stick pan, melt the butter on a medium heat sauté the pears and pine nuts for about 3 minutes. Add the sugar and water and continue the cooking, mixing frequently, until they are golden and let them cool down.

In a salad bowl, season the mix salad with walnuts and vinaigrette, mixing well. Add salt and pepper if necessary. Serve with the salad into plates with a caramelized candied pear slice of Dolce Culatta Conti.
